South Plains College holds a special place in Joy’s heart. From a young age she looked forward to taking classes at SPC, and when she became a student there, she developed long-lasting relationships with her professors and peers.
Joy began her education at South Plains College as a dual credit student while finishing high school. Pairing dual credit with her homeschool background was a smooth transition for her into the college scene. Always fascinated by God’s amazing design in creation, Joy took multiple science and mathematics courses at SPC before she decided to pursue further studies in the nutrition field. The faculty at South Plains College played crucial roles in Joy’s life to support and help her prepare for further studies at Texas Tech University, where Joy completed a Bachelor’s degree, Master’s degree, and dietetic internship program.
Joy often reflects on her time at SPC with a heart full of gratitude for how Jesus provided just the right opportunities during her time there to prepare her for her current work. Educating and equipping women, kids, and families to discover and build a nutritious lifestyle is one of Joy’s passions. Today, Joy works as a Registered Dietitian in the role of Community Nutrition Educator at a local chiropractic clinic in Lubbock, Texas.
